First Pork Shots with some ABTs

I've made ABTs loads of times, but never made any pork shots. I got some pretty decent jalapenos for the ABTs and figured since I was smoking them I make a few pork shots (6 to be exact because I wasn't sure if we'd like them).

Got some Earl Campbell's Smoked Sausage, Thick Sliced Bacon and Philly Chive Cream Cheese, added some Slap Yo Mama, some of my smoked ground Jalapeno and Sea Salt mixture and a shake of Smoked Paprika for the stuffing for the Pork Shots and ABTs. After assembling I sprinkled the tops of all with some of my rub and added shredded smoked Mexican Blend Cheese to the Pork Shots. I also a piece of the smoked sausage in the jalapeno boat before stuffing with the cheese mixture. I "fry" my bacon just a little bit on a hot cast iron griddle, really nothing more than warming it on both sides and it helps with crisping the bacon in the MES. 

These were done in the MES 40 at 250* for about 2.5 - 3 hrs (done is when the bacon looks good) with Jack Daniels Bourbon Oak Barrel Chips and Cherry.

Very nice love pork shots, I do mine with thin bacon since my smoker cant get very high, I may have to try think and cook it up a little in oven before goes to smoker,

Thanks all! They turned out really good and I will be making them again but with my homemade kielbasa. I found heating the bacon up just that little bit makes all the difference in the world when it goes in the MES.
