First Brisket

Well, seeing as I have never had brisket from a smoker, as a matter of fact, Iâ€[emoji]8482[/emoji]ve never had brisket (other than corned beef of course) I mean I am of Irish descent (does that mean Iâ€[emoji]8482[/emoji]m going down?) LOL! So I have been staring at all this awesome food porn and I guess itâ€[emoji]8482[/emoji]s time to enter into the fray! Iâ€[emoji]8482[/emoji]m gonna keep it simple…we donâ€[emoji]8482[/emoji]t really have anyone coming over so, maybe a brisket, a couple of fatties and some burger and dawgs on the grill (actually, I may do the dawgs in the smoker, they taste better, I think. Now sheâ€[emoji]8482[/emoji]s only a 4 pounder, so I think 6:30 am is good time…gulp! I hope

Enjoy the adventure. I have smoked dawgs while waiting for pork butts to finish. They are good. Be patient when the brisket hits the plateau. The last one I did hung around 149-152 for about 3 hours. It actually dropped a couple degrees before it started to climb again. It was a 6.25 lb flat. I'm also a bit Irish. Your 6:30 start time is a good one.

Good luck on the brisket. Did you read the sticky post on Briskets in the beef forum? If you have any questions, please ask away as I am sure somebody will be popping in and out durig the day.

Carl, Just me and the wife today .. we're making beef ribs and chili .. we smoked the meat for the chili. smells real good ... we also have corn on the cob .. it's a quiet day here but the weather is great .. 68 now .. was 78 .. Hope your day goes well ..

Well, I pulled the brisket out of the cooler about 4:00.
I ran into a problem with Dutchâ€[emoji]8482[/emoji]s Wicked Baked Beans (I only had 4 slices of bacon left…so I took some creative license and added 4 slices of homemade smoked canadian bacon I did last week, cubed up and mixed it with the bacon on hand. Forgive me Dutch!
Brisket was very tender and Juicy…Yummmm!

How did you like your first brisket? It is a different flavor and some folks don't care for it. I'm always interested in first impressions :D

Brisket looked absolutely slendiferous, by the way. 8)

Yâ€[emoji]8482[/emoji]now Roger, Everyone loved it! But to be perfectly honest, I prefer a good lambchop over steak every time. Mind you it tasted good, but beef is probably #5 in my book. Lamb, chicken, pork, venison, in that order.

My favorite part of a brisket is the chopped up fat part from the point. I cook it down and feed everyone else those pretty slices from the flat and chop that point up for sandwiches. :D
Edit:Hey Carl, the next thing I smoke will be lamb, and yes I've had a great day 8)
 
Carl, you do what ya gotta with what ya have on hand so no problem here with you taking "some creative license".

The pineapple thing was the Brides' contribution to the developement of that recipe. When I first develped this recipe, it didn't have the pineapple and I thought it needed something sweet besides more brown sugar. The Bride suggested the pineapple, 'cus that's they way her Mom maked Baked Beans.
