First post on here and just wanted to share my first successful brisket cook! Smoked it hot and fast ~315-325 degrees on my offset, pulled at IT of 205 and it actually turned out super juicy. Started out as a 10 lb packer and the total cook time was a just little over 6 hours. Definitely going to be doing hot and fast for now on.
Nice! I think that's the way to go with off set b/c I'm not trying to get up at 4 am and go 14 hrs. I mean I can't drink beer that long. I've tried and I can't! lol
