First post on here and just wanted to share my first successful brisket cook! Smoked it hot and fast ~315-325 degrees on my offset, pulled at IT of 205 and it actually turned out super juicy. Started out as a 10 lb packer and the total cook time was a just little over 6 hours. Definitely going to be doing hot and fast for now on.

You set the bar waaay to high! :emoji_laughing: Looks amazing! I haven't done a hot and fast yet, but that right there... that just might be the push I need! Bravo!
