Doing my first brisket today, wife picked up a small 4 pounder.

I have been smoking for a little over a year and have been reading up as much as I can so I think I have a good game plan. I am leaning towards smoking at around 230 deg until it reachs an internal temp of 165 then foiling it until it reaches 190 deg and then doing the toothpick test until it is done.

When done it will go on a cooler for 1-2 hours depending on the time.

Any ballpark on how long this may take, I am figuring 5-7 hours to cook then set time?

Thanks.

Thanks for the replies and the brisket is in the smoker. Keeping my fingers crossed!
