Hey quick question....I been reading a lot on here and a lot of folks say if u want a good bark don't foil ..... I have mine in a Tim pan following Jeff's recipe... If I want the bark should I take it out??
 
You should still get bark in the pan, if you cover the pan later in the process it will compromise the bark.

Ok fair enough....I was just curious we r 3.5 hrs into it and internal temp is 112 we will see what happens
 
Gosh having trouble keeping temp in check today.... Up and down up and down.....this is stressful..haha mite be because I been up since 4am and been drinking since bout 9am hahaha oh well ...
 
I am trying to post pics of the ribs and Cornish hens...but phone is on the fritz again....it's kinda sad that after all this time today and effort and good looking food that was in front of me...I didn't have much appetite hahaha
