Yeah the wind is killin me I just added a hot chimney of coals I can barely keep 180... Yes 2-2-1 but its gonna be moe like 3-2-1 cause of temp time will tell
If my temp was closer to the 170-180 mark for most of the first 2 hrs how much longer you think I should leave them before I cover em up... I finally got the temp to hold around 210
Well it was a bit torturous but they're done and we have yet to see how they taste... It was just a bad day it happens all that matters is that I had a great time and hopefully they taste well!
Thanks bill never got the temp over 220 but did the middle 2 hrs in the oven at 260... The flavor was great. Not quite as tender as I'd like but certainly not too tough! I decided that being I had the smoker at about 220 at the finish I would make some lunch for tomorrow and not totally waste the remaining charcoal!!!
Congrats!! It must have been a good day to do ribs as we all had the same idea. Smoking meat is like falling off a log if you can follow directions you can smoke meat!
Thank you all for all of your help and motivation yesterday! It is greatly appreciated! Everyone loved how the ribs turned out and can't wait to come back for more! Hopefully next time I won't have so many problems with my temps and they'll be a bit more tender... I guess there's a first time for everything that's never happened to me before and I've used this smoker in colder weather than we had yesterday
