Fennel spice rub

I finally found some Fennels seeds to try this out... actually, its pretty good and worth a shot.. to test it , use it like salt and pepper on whatever you want..

1 Cup Fennel seed = 2 small 1.6oz bottles

3 Tablespoon Coriander seed

2Tablespoons White Pepper corns

3 Tablespoons Kosher salt

Take the first 3 items and toss em in a pan over medium heat til the aroma kicks in real good..

let cool and add the salt.

grind it all up and your done...

I put some in a shaker and tried it on some pork loin, i love it...

 
Hmm, interesting. I've always had a love/hate relationship with the taste of fennel. Maybe toasting it first is the secret.
I just put some on a Pork Tenderloin and tossed it in the smoker.. Its got a little zip dry,we will see what happens when its cooked.. I did add a little bit of dark brown sugar to it... I use about 1 tsp per lb of meat on the sugar so it shouldn't be to sweet and kill the Fennel...

I think this combo would make a pretty good base for a kick azz rub... that's where me and my buddy are trying to take it... we don't do comp. cooking but we cook for folks and were planning a huge Butt party for next year. we don't want just BBQ sauce- so were testing out different rubs and flavors..
