Boneless, skinless chicken thighs from the freezer. Trying several preps to see what we like the best.

Trimmed 9 thighs to try to have consistent thickness and seasoned 4 different ways. Cherry pellets under the fire box of lump charcoal.

Cholula hot sauce binder and fajita seasoning. Will baste with butter and Cholula at the end.

Basic salt, pepper, & garlic. Baste with apple, cherry, habanero rib candy at the end.

Meat Church Holy Voodoo and Head Country Hickory sauce at the end.

The trim nuggets are a salt, pepper, lemon seasoning.

Choosing the best is tough. They were all good. My wife liked the rib candy glaze. If i had to pick only one it would probably be the cholula and fajita. These thighs were very thin and the binder may have helped them stay moist. Grilling may have been a better option because they were very thin and skinless. However, I wouldn't turn them down.
