Just got a Masterbuilt 30" (MES) and excited to get smokin'!  Have never used a smoker before and hope the learning curve is much easier with the electric kind.  I am a married father of 3 girls living in Fort Worth, Texas.  I'm in the heart of BarBQ country, but from California originally, so I feel like a fish out of water with the whole smoking thing.  Looking forward to getting some valuable tips in these forums.  I already downloaded and made the special rub by creator of this site and am tossing some baby backs in the MES tomorrow morning.

Congrats on the new smoker. If your doing baby backs tomorrow have you seen any threads about the 2-2-1 method? Set the smoker to 225 put the ribs in on the grate for 2 hours then wrap them in tightly in foil adding a little liquid before sealing the foil apple juice works if you have any and put them back in the smoker for another 2 hours then pull them out and carefully unwrap them (they may try to fall apart) then place them back on the grate without the foil for 1 more hour. If you want to glaze the ribs with sauce do it the last half hour tho I prefer to serve sauce on the side. Good luck with your first smoke and let us know how it goes
