Happy belated Easter ya'll! Had some beef belly that got done curing in time for Easter, as well as some sweet and spicy beef sausage.

Some nice wagyu beef belly from Pacific Rogue Wagyu, rubbed and bagged on the 3rd. Giving one to a buddy so he can try it out (excited for him since it'll be his first bacon, and doing it with kiawe wood)

Been awhile since I used Cookinpellets, but used two rows of their perfect blend, went for 10 hours. Belly is on second grate.

Cleaned up the links, bloomed for an hour. Bacon ready to wrap and rest a few days. Will have sliced and fried shots when ready!

Really happy I got some! PRW was having a sale at the time so I got 3 slabs, roughly 29 lbs for about $150! Sucks that they aren't listed on the site anymore. 😔
Wanted to go back and get more.

That is done nice looking beef bacon. I haven't done one with belly yet but I do make beef bacon from brisket.

Thank you! I actually think it was your post that had me wanting to make beef bacon! Was gonna try it with a point cut, but saw that sale on the bellies.

That's looks great. Never have done it with wagyu beef before but I bet that flavor is amazing on it.

Haha, if they still had it on their site, I'd be talking about it for a loooong time. $55 for a 10lb slab of wagyu? That's a no-brainer!
