Does anyone wrap there boneless turkey beasts in foil

I have not tried that, but I reckon it wouldn't hurt.... I'm sure one of the experts will chime in soon.

I inject the breasts with melted butter and white wine.

Even add some garlic

well if your talking about smoking the breast then no I don't wrap it, I usually brine the breast spice it up smoke it on the rack till she hits 160, and then watch it disappear, If I am roasting it then I always wrap it until the last hour or so  then unwrap to let the skin get crispy
