The Bride asked for some Brats. So I smoked them with no heat for a few hours with the smoke tube and then finished them off on a universal direct sear drop-in with grillgrates as the surface.
Genuine grill marks and true grilling is basically impossible with a Traeger and most other pellet smokers brands. I found this drop-in universal setup when I was buying replacement heavy gauge stainless heat shields and drip pans. It’s a dream for grilling. You remove the heat shield and drip pan. The setup is 19.5” X 19.5” and it is a square cone centered on the fire pot. You cook directly over the firepot. I use it often since I received it. I need larger GrillGrates and 4 panels to finish up my setup. These panels are 18.5”. They’ll fall off the ledge without the stock grate installed. With a set of 19.25” they’ll have plenty of space front to back yet will not fall off. This allows me to slide the setup left to right off the heat for some indirect smoking with the sear station installed for some reverse seared steak perfection.
