I was just wondering if anyone had tried deboning a deer ham and cutting it like BBB and trying to make bacon out of it that way. I was thinking about doing it this fall and just wondering if it would work or if it is too lean.
The problem with venison as with most wild game is there isn't any fat marbling in the meat so it is really lean. You would have to remove all of the tallow and all you would be left with is lean meat so I'm guessing it isn't going to turn out like you would want it. Could you do it? Yea. But you would probable be better off doing the ground venison bacon like MossyMo does. You grind your venison along with some pork and then there is a mix you can buy from Curley's and you make the meat into meat loaf style patties then smoke them and slice them up. I have been meaning to make that recipe for a few years now.
