My daughter just returned from 3 months in Europe (France, Italy, Spain), we love any good reason for a celebration. Due to looking for houses with realtor I didn't have enough time to do any smoked Q, so the following menu and tips are for grilling on a Weber Kettle:
I have no Q view, sorry.. I will give some recipes and tips, I hope that gets me some points. I was moving too fast, to take any pics.
Menu is real simple but delicious..
• Lemon - Cilantro grilled Shrimp
• Grilled Asparagus
• Grilled Seasoned Red Potatoes
• Imitation Crab Salad, with bay shrimp
• Fresh corn with roasted pepper.
• Garlic Bread
• Desert - Strawberry Short Cake.
Marinated
Lemon - Cilantro Shrimp,
- About 2lbs, we had 36 (extra large shrimp or 15-20 ctn).
- 3 Lemons, zest all 3, juice from all 3 (if you have lime substitute a couple of limes
- 6 large garlic cloves minced
- cilantro 1 bunch leaves no stems chopped
- 1/2 tsp fresh ground black pepper
no salt
- wooden skewers (soak in water a min. 30 min)
Brine
- 1/2 cup salt kosher salt
- 1/2 cup of sugar
Peel/clean and brine shrimp. Allow shrimp to sit in brine 20-30 minutes. (Find a good ref. on brining).
Make the marinade. Chop the cilantro, mince the garlic, add lemon juice and zest, add pepper. Mix thoroughly.
skewers shrimp onto skewers.. 6 per
Cook shrimp over direct heat, until done, baste with marinade during cooking. (Serve immediately)
Grilled Seasoned Red Potatoes
6 Med. Red Potatoes
1/4 cup EVOO
2 - minced cloves of garlic
1 - TBSP Emerils seasoning, I make my own using his recipe
1 tsp Garlic mix, I use something called "Johnny's Garlic Spread" it has garlic powder and other seasonings. We get it at Costco
1/2 tsp fresh ground pepper
1/2 tsp kosher salt
Wash Red Potatoes and dry, toss them in the above mixture/marinade you can grill immediately or let sit 10 min or so. Grill potatoes over indirect heat about 30 minutes or until done. (No alum foil)
*At our house we often won't add any butter or other dressing to the potatoes there is so much flavor.
Grilled Asparagus
I prefer the thinner stalk, cut stalks at breaking point, blanch in boiling water, for 20-30 sec, place immediately in bath of ice-water to stop cooking. Place in marinade for about 10 minutes or until ready to grill.
Marinade
2 Tbsp - EVOO
1 garlic glove minced
1/2 tsp - balsamic vinegar
dash of salt and pepper
Grill these last over direct coals, for about 1 minute, serve immediately.
Imitation Crab Salad, with bay shrimp
My daughter loves this stuff, our local grocery store makes excellent imit.crab salad. We kick it up a notch by using cooked shrimp meat. The shrimp meat has that salt briny taste, and really adds a lot of extra flavor. We go with about 3 to 1 ratio. You might ask why imitation crab, we have been using imitation crab for ever, and we like it. If this was a very special occasion we would make our own with real crab.
Fresh Corn with Roasted Pepper
- Corn
- 2 or 3 tbsp fine chopped onion
- 1 roasted jalapeno pepper
- 3 tbsp butter
- Salt n Pepper too taste
You can grill 4-6 ears of corn, or use frozen. I was in a hurry so I used frozen. Roast on the grill one jalapeno pepper, remove the charred skin, seeds and veins, fine chop the jalapeno and onion, add to corn while cooking the corn. Drain if you used frozen, add butter, salt n pepper to taste.
Garlic Bread...
Make it, enough said
Strawberry Short Cake
- your fav shortcake
- fresh strawberries
- lemon juice
- sugar
- whipped cream
Cut stem off, wash strawberries, dry, slice, (I like to leave 2 - 4 whole strawberries per serving). In bowl with sliced strawberries add 1 tsp lemon juice per serving plus a little extra. 1 tbsp sugar per serving (you can use a little less to save calories, but you need to balance the lemon). Mix the strawberries, sugar, lemon about 1 minute with spoon, add in large strawberries, mix gently another minute (you want to make sure the lemon juice and sugar has coated all the strawberries, it draws out berry juice). Cover mix bowl with plastic wrap, refrigerate allow a minimum of 30 min. to macerate before preparing serving,
Slice shortcake, drench cake with some juice, add layer of strawberries, some whipped cream, a couple of large strawberries, and another one or two spoons of syrup.
None of the above is complicated, but every menu item has some serious good flavor if cooked or prepared properly.
