I’ve avoided country style ribs like the plague most of my adult life because I remember having them as a kid and they resembled shoe leather more than something I’d like to eat. Thanks to chilerelleno chilerelleno and a few others on here and I figured I’d give it a try. They turned out phenomenal!
Hit em lightly with my favorite rub. Smoked at 260 over mesquite pellets till an IT of 185, hit em with some sauce and pulled at an IT of 195. They averaged about 1 1/2 to 2 inches thick maybe and smoked for a total of 5 1/2 hours
 
I always liked CSRs but like you not when they are tough.

Smoked some up Hawaiian style a few months back. If I recall I pulled them around 190. Was kind of disappointed in how they turned out though.

My sauce recipe tasted good when made up. But some reason it didn't go well with the smoke flavor on the CSRs. Some pieces were tough and some were tender.

Plan on doing them again. But will probably just do it in a typical BBQ style. Rub down, smoke and sauce the last half hour or so.

Looks like your CSRs turned out nicely and glad to hear they tasted great.

Just out if curiosity did you use boneless or bone in CSRs?

They were bone in. At 195 all mine turned out tender except 1 that got pushed to the very back. Apparently I have a hot spot back there because it got a little crispy! Hawaiian style sound good, I may have to look into that.
