Corned beef - First overnight smoke on the new RT 1100!

Did my first overnight smoke, kind of a test run before I actually needed to do one. Had a frozen prebrined corned beef that I thawed for a couple days for this adventure...

Never used a temp below 220* (on purpose) to smoke for an excessive time. Decided around midnight was a good time to start, figured I could keep an eye on it for an hour then call it a night. Started it on 190*, but it actually only ran at 180*. The smoker took a minute to get steady but as you can see ran straight all night so other than the 10* miss, I cant really argue with the consistency.
Woke up around 6, looked at the app, was still keeping on so went back to sleep for another 90min.

Got up and bumped up the temp to 225* to move this along (looked fantastic too) and foiled at the stall 169* just to rap up this test run, plus I'd like to eat corned beef sandwiches for lunch!

Pulled at 205, rested for about 90min and then sandwiches for lunch on an everything bagel with some melted provolone, mayo, and avocado... It was fantastic

I always try to buy a couple extra when they're on sale around St. Patrick's day and freeze them. Though I'd think beef would be more reasonable in Texas and you could brine your own from scratch.
Been crazy here also. Use to save the flat for corned beef but have not bought a brisket in a couple years now. Just to $$ for me. Never had a good sale last St. Patrick's day.
 
Let me say that’s a great looking corned beef. With the added cheese it must have been one heck of a sandwich.

I’ll vouch for the current price of corned beef. The one we cooked yesterday was a Sam’s corned beef and it was $34.

I have not smoked a brisket yet. Too big for the wife and I. Maybe we’ll get a full brisket at Sam’s, cut a chunk for the smoker and corn the rest. The last price was $5.69 pound for a 16 or so pound brisket.
 
Got a corned beef hanging in the freezer.....That sammich may have convinced me to dig it out!

I looked at Sam’s and about the same price 7.68 a lb. I passed then had to go to Costco
My Costco had them for 5.49 a lb so grabbed a couple of them. If you have a Costco around may check it out.
