I'm throwing my wife a 40th birthday party this weekend and i plan on smoking 4, 10 pound butts on my MES 340 at 225. I obviously go by temp, but I'm looking for a best guess on cooking time.
Could be 12 or 16 or 18 hrs or more. All depends on the meat. I've had butts stall and take forever to start going again. Best thing is to wrap up and power past the stall temp. Most butts take me 18hrs. But I also been lucky and only take 11 to 12 hrs. But I don't wrap my butts. They might all look almost the same but they all don't smoke the same.
