With all of my smoker mod experimentation I've been smoking the crap out of chicken because it is the cheapest meat I can get my hands on (that or country style ribs) for checking out smoker modification performance.  I am now in love with smoked chicken!

For whole chicken I find my best results to be with a simple salt brine no less than overnight and then smoking on a vertical chicken/turkey roaster (it's like a beer can chicken device).  The skin seems to do better about being edible when on a vertical roaster, not sure exactly why but I read about it in an excerpt from an electric smoker cook book and sure enough it was a major help.

I also found that doubling up my Pit Boss Competition Blend pellet smoke gives great flavor for the chicken.  Chicken cooks so fast you either have to cook really for longer to get more smoke or light two ends of an AMNPS row to get double smoke.  I do the double smoke where others extend the time.
 
The skin crisped up nice. 3/4 full on the chip box got 3 hrs of good apple smoke. Juiciest chicken breast that I have ever tasted. Going to do a beer can chicken soon
