Some 2 months ago i made some chicken,sage and garlic sausage following Shyzabrau recipe
and it was exelent. I ate it much too quick and kept thinking about it since. So yesterday the stars aligned and i was able to make more. Followed the recipe almost to a T. Almost. up the salt,sage,pepper and garlic just a little thinking more flavor. NO? 20181103_144711.jpg Got my ingredients together 20181103_145953.jpg Got it all mixed together till sticky like hell (darn its hard to keep your gloves on !) 20181104_063922.jpg Now ! First mistake:dont assume you have casings ready! Went to get my 32-34 mm casings out of my fridge and suprise! what ever happened the rest of them gone bad. And the new hank is still in a salt pack, nowhere ready to use. 24mm collagen to the rescue! It was only 5lb. batch but i remember frying a patty and going to haven so 6x5oz. bundles for lunch.Those went in the freezer. Coil in the smoker for 7 hrs or so and 4 hrs of smoke then into hot water to finish.(the last batch i finished in the smoker and casing were pretty hard) 20181104_125354.jpg 20181105_112625.jpg Here they are. What a disapointment! I dont know what went wrong. Went through the recipe several times and am not able to pin it down. The casing stayed moist but the flavor has disapeared despite the increase of garlic and such. Any ideas?
 
Well , they sure look good . Did you roast the garlic or was it raw ?
 
Yes I roasted it with olive oil about 40 minutes.Still can't put my finger on it. The only big diference was
first one was finished in the smoker and this one in the water bath. Hope I can figure it out.
 
If I'm looking for garlic flavor in sausage , I always use raw . Did you roast it on your first batch also ?
 
CD, They look good, maybe the flavor leached out in the water ? Maybe the flavor will return after they rest??
 
Yes I roasted it on the first also. Loosing it in the water -posible. Was only half hour. Am going over my notes and the original recipe and one other thing stood out. The first I mixed and stuffed one day but ended up smoking 2 days later as to the second -mix and stuff one day and smoke the next. Am stumped! I was looking forward to it! What to do? Might have to smoke me a Fatty to make me feel better
 
You still have some bulk right ? Doctor it up if needed
All kinds of ways to use up the links , but yeah be nice to know the fix for next time .
 
Good idea! Will take some out of the freezer and try it for lunch. See if it's diferent.
 
So i took some of the bulk that did not get smoked out and fryed it up. 20181106_114320.jpg
It was a lot better tasting then the links. Just for comparison i did part of the link also and the taste is totaly different.
And not in a good way. What gives? I guess that is what i get for "improving " something that should be left alone.
Only solution is to get more chicken and try again.
 
I think crazy moon might have it ,, lost flavor in the poaching liquid .
