Here is my take on a Chicago style deep dish pizza. I have been wanting to try this for awhile now so I decided to finally buy a pan to make it in.
Here is the pan, cast iron of course and about 2” deep.
And now the dough.
The pan is very liberally greased with butter.
Then the bottom crust is rolled out to just hang over the edge of the pan. Which I don’t seem to have a pic of.
Any ways the dough filled pan is then stuffed with favorite fillings, first lots of mozzarella cheese, some of my browned Italian sausage, some of my
Dry cured pepperoni and some of my cured Canadian bacon.
Then top with remaining crust, the sauce and more cheese.
Bake, slice, enjoy.
