Smoking some pork shoulder and brisket today. I have the temperature on the smoker set at 250 but it will not heat up over 240. I've been up and running for over an hour. I cooked my last pork shoulder at 225, so I know it will still turn out OK. But was wondering if anyone had any ideas why it will not get up to temperature?

Just checked again and it's down to 228... I think I'll turn it up to 275 and see how it responds.

Turned up to 275 and it topped out at 262. Went back to 250...hovering around 232-238. Better off to go to low and slow!

Are you testing temp with the built in thermometer or a external one that you know is accurate
 
I finally did test with an external probe... the internal probe is about 5-7 degrees off. I think it was the combination of the built in thermometer not reading correctly and I had the smoker loaded down with meat. About 4 1/2 hours in everything seemed to be better. It's now reading between 242-248... so we are close.

Make sure your chimney is not open too far. That can be a big factor as i had some issues with my STX and thatbwas my problem.
