I modified an electric Meco to charcoal with Weber charcoal ring and grate. I put the water pan on the bottom for ashes. On top of that i put the charcoal ring along with the grate. This model is stainless and I guess you'd  put the height at less than 3 ft. I plan to smoke only fish and if I install a second grate it would only be 2-3 inches above the charcoal ring. will this be too close for smoking fish fillets ? I realize the temps will be 200 but will the local grates get too much heat. Otherwise I just have to use the top grate and skip the lower position.

I would maybe try it, but watch it closely. I would think it's too close and your fish will turn into potato chips, but I hate to be a downer. Try a small piece and see how it does. I could be wrong.
