Thought I'd git in on the brisket game this week also. Prepped it and some ribs.

Brisket went on at 7:30 last night followed by ribs at 4:30 this mornin.
Wrapped at 9:30. All that pooling came out when I pulled the probe out. Looked like when Jed Clampet struck oil.

Then thought brisket should have some brisket sausage to go with it.

On the smoker till 145 then chilled and let bloom a bit.

Then the grill right as everybody started showing up.

All went well. Sausage could have been better but it was made start to finish in 5 hours. LoL

Dag nab it that’s some Q!!! Granny would need the 12 gauge to keep the neighbors out of the kitchen for that spread!

Man Jim that is a lot of deliciousness there! Did you make the sausage?
Yea last minute thought. That I should have thought about the day before. LoL
It was all left over trimming all beef. Just SPG and NFDM. Should have finished it in the smoker. The high heat from the grill melted a lot of the fat out. So the texture was off.
Just started playing with sausage making.
