On Sunday, to be smoked was: a brisket, cross-cut beef ribs, a rack of baby back ribs, some sausage, beans, and for the first time, ABT's. I got the brisket started at 5:30 in the morning and put the rest of the stuff on later that afternoon. I had a bunch of people over that evening so I got a bit lackluster about taking pics toward the end but here's how it went down.

Here's what I had to work with...

Brisket is set for a long day...

Even the moon's sleeping at this hour...

2 hours is the tip of the iceberg...

TBS??? Check!....

Brisket 5 hours in...

I marinated half of the cross-cut beef ribs...

Approximately 7 hours for the brisket and 2 for the baby backs
I just got done putting the cross-cut beefies in the smoker...

A couple more pics coming up in the next post.....

Here's some of the flat sliced up......

And the point sliced up.....

Everything came out great. The total time for the brisket was about 17 hours. Even though I didn't foil nor rest it, it turned out very tender and melt-in-your-mouth delicious.

Thanks for checking in on my QVIEW,

Tom
