Had the opportunity to smoke a brisket for the first time today.
Was given half of a flat from my father. This only weighed 3lbs.
SPOG and paprika rub for 1 hr while firing up the rig.
Smoked between 225-250. I wrapped at 170 IT with foil/rub/butter/water. Ran out of fuel when IT was 185. I placed it in the oven to finish (still wrapped). I was impatient and pulled it from the oven at IT 195 and wrapped with foil again and towels.
This rested for 45 minutes before I cut into it.
Total cook time: 6.5 hours (not including rest).
Overall, happy with my first attempt, bark formation was lacking and I should have finished in the smoker.
