Ok....this place is addictive, that's all there is to it. Seems as though every meal I make, the inspiration has come from somebody in this forum. Certainly I'll mix it up a bit, but the base ideas start here, then my warped imagination goes into overdrive. Originally I did not intend to post this right on the heels of a similar post, but I sent a couple pics to one of our members this morning via PM and was encouraged to post it. First as a testament to the person who did the original thread, and second to give other folks ideas for something a bit different. The idea for this came from my friend Zach ( Misplaced Nebraskan Misplaced Nebraskan ) and his tater bombs. Over the past several years we have done a bunch of different stuffed (or loaded) baked potatoes and I've done twice baked potatoes on a number of occasions. This is kind of a combination of the two. Being that I didn't intend to post this, please cut me a little slack for the picture quality and lack of presentation. There is a method to my madness for taking pics, even of things I don't intend to post.

Here are the taters baked and all the "meat" removed. The "meat" was put into a bowl to make mashed taters with. You'll see...

Cook for a bit to re-warm them and add the second round of cheese

Somewhere along the line I made a simple salad of cucumbers and pickled onions with my spicy pepper vinegar, which I thank Joe ( xray xray ) for introducing me to. No pic of the salad but here are the condiments

This certainly wasn't one of my prettiest or best presented meals, but it sure was good. I plan on these being part of the ever growing rotation of food around here. I'm dying now to try these with chuck roast. The brisket was outstanding but I have a particular affinity for chuck. Apologies to all if I'm over doing the tater posts but after the encouragement I got to post it, I kinda felt compelled to go ahead and do it.

Incredible! I think you must have some of everything in your freezer ready to pull out at moments notice! Seriously though nice job and a wonderful idea.

Care to share that mashed potato recipe?
 
I certainly wouldn’t be ashamed! Creative and looks delicious. Points for sure.

I truly appreciate the sentiments but it's just not up to what I typically like the good folks here to see.

Thank you John. I have 4 freezers. Two are standard size refrigerator / freezers in the utility room, the one in the kitchen is a French door and has a massive pull-out freezer drawer in the bottom, and I have a 26 cubic foot upright freezer in the garage. We tent to eat pretty well off leftovers when we need to :emoji_wink:

Care to share that mashed potato recipe?

Simple stuff. To the taters add a splash of milk, some butter, a nice dollop of sour cream, salt and pepper. Mix until smooth as silk. I added the green onions after mixing the taters so as not to turn them into green slime.

Taters FTW!:emoji_laughing: Truth be told This is where I was envisioning the tater bombs evolving... leftover meat BBQ tater bombs! Excellent execution! Loving all the ideas of new sides to try. Variety is the spice of life. Having had your Twice baked potatoes before I know these had to be good. Great job.
 
Looks good, really good. Can you share the recipe for the spicy pepper vinegar? That sounds good.

No shame necessary there! In fact that is EXACTLY how I have made twice-baked. Minus the brisket of course but always bacon bits.
Got tri-tip planned for tonight..I think I just might have to throw some taters in to go with it.

Thanks guys!! Truly appreciate the positive feedback. It's just that when I'm making something that I know I'm going to post, I tend to be a lot more meticulous with the photographic documentation and the presentation. Yes, they look ok, but not up to what I typically like to post. As our friends Chili and Zach know, it's all about the presentation, and mine fell short. Oh well....it still got some folks thinking in a different direction, and that was my intention for posting it.

Thank you Zach. I can't tell you how much I appreciate the graciousness of your commentary. The last thing I wanted to do was steal your limelight with the featured thread including the tater bombs, but these went far enough a different direction I felt it'd be OK to post them. It's odd that I've done loaded taters as well as twice baked but never thought to combine the two....until I read your thread. Your tater bombs looked like they could be a meal in and of themselves but were lacking the meat IMHO. I managed to solve that problem in a way that is hopefully befitting of SMF and your amazing thread. Thank you sir for the inspiration!!

Pretty simple stuff my friend. 6 oz white vinegar, 6 oz ACV, lightly boil to meld flavors, pour into a 12 oz jar with 16 cayenne peppers that have been washed and stems cut off. Let sit for a couple weeks (the longer the better) and enjoy.

Hell, even I can remember that one :emoji_laughing:

Thank you Joe. They really did taste good. I was happy. A nice bit of smoke from the brisket, and a bit more from the Rec Tec, and it was perfect.

It doesn’t have to look good when it’s damn tasty.

I won't disagree...as long as it's just me that's eating it. If I put it in front of Tracy, or post it here, I want it to look better. I can live with this one though as I think I made the point I set out to make when I decided to post it.....which was the sharing of ideas.

Thank you. Now I need to find some cayenne peppers. They are virtually impossible to find up here. I may have to use Serrano's instead. Those I can find.

I have a bag full that have been dried and would work fine. I can also touch base with my friends who I got these from and see if they have any more that are fresh. Last time we were there, they had thousands of them growing.
