First time Brine so we shall see how it goes i will post later the result.

4 Cornish hens

1 gallon of water

1 1/2 cup of white sugar

1/3 cup of mongolian fire oil

3 tbl of lemon pepper

1 1/2 tbl of ground peppercorn

2 tbl of onion powder

2 tbl garlic powder

1/3 cup soy sauce

1 bunch fresh chopped Cilantro

your guess is good as mine, but it sure did taste good to me.

Your brine sounds interesting....Just a couple of questions....What is that mongolian fire oil? and ..what are you using for the salt..to make the brine do it's osmosis thing? Other than that , it should be pretty tasty.

mongolian fire oil? I was just going to ask that. Your brine sounds fairly close to mine except the mongolian fire oil - nad I also use canjun Spice and brown sugar instead of white sugar.

sorry i missed an ingrediant(salt)

they turned out out really well the cilantro did not take though.
