Hey guys,
I'm fairly new to smoking and I just bought, and used for the 1st time, a masterbuilt propane vertical smoker this weekend.
I smoked a full slab of ribs using the 3-2-1 method and they turned out great.
However, I also smoked some jumbo chicken wings and they turned out horrible! I smoked them for about 2-1/2 hours. The skin was tough as leather, but the meat was fairly tender.
What did I do wrong?

lot's of reasons why skin was like rubber, biggest reason is you need to finish chicken with high temp to crisp skin, or finish them on hot grill.
 
Ok thanks. I will try again this weekend, they are cheap enough if I screw them up.
 
If you're doing just wings themselves..
.. run them hot and faster.
