Well, Kroger had it on sale again. Last sale was $5.99 a pound, but at $6.99 a pound I couldn't resist. Bought a 7.5 lb'er. Cut in half, and vac sealed half of it. Got the other half rubbed down in the fridge. Smoke it tomorrow afternoon. I won't be doing a bunch of crap/distracted tomorrow, so I will post pics. It was tremendous last weekend. Smoke on!
 
3 lbs. Going in smoker soon. Guess I’ll stick therm probes in the ends.

Must not have therm in center, or maybe I need to do boil test. I loved it, med rare. Cut outside piece for the wife and seared it in skillet.

Did boil water test. Probes never varied more than 4 degrees, and always came back together. Water started rolling at 212, spot on. I need to pay more attention when I put the probe in. Small piece of meat, but I obviously wasn't near center.
