Didn't really know where to put this so in the general discussions.

I made a chili using Bison and Turkey meat. It was wonderful!

Here is the recipe/qview

2 Tablespoons Clarified Fat from a smoked Brisket
1 Medium Onion Chopped
4 Cloves Garlic minced
1 Jalapeno Diced Fine
1 Lb ground Bison
1.25 lb's Ground Turkey
1 C Fat Free Low Sodium Beef Broth
2 19 Oz Cans Red Kidney Beans
1 28 Oz Can Crushed Tomatoes
1/4 C Chili Powder
1/4 C Paprika
1 Tablespoon Oregano
1 Tablespoon Cumin
1/2 Tablespoon Salt
1 Teaspoon Cayenne
1 Stick Cinnamon broken into 2 pieces

The players

Brown meat (both Bison and Turkey) over medium heat
Drain and set aside
In your chili pot heat up oil over medium heat
Sautee onions, garlic, jalapeno's, and spices over medium heat till onion has softened
Add meat and all other ingredients to the chili pot
Simmer covered over medium low heat for 2 hours
Taste, Re-season and server with crusty bread, raw onions, cheddar, sour cream or whatever you love to serve your chili with.

The final product with Sour Dough bread, Sour Cream, and Cheddar

Hope everyone enjoys it!

It looks great...
