Best turkey ever! Dry brined....

- Small whole turkey.
- Hit with basic rub and three Tbl of salt two days earlier.
- Uncovered it 1/2 day before cooking.
- Turkey stayed in the pan in the smoker. Add 1/2 can of beef broth to the pan.
- Charbroil Analog Electric Smoker with a few mods to get more smoke. MODS
- Smoker on high, temp ~ 270F.
- Two chip trays of apple wood gave me 90 minutes of smoke
- Wrapped in foil after 90 minutes
- 90 more minutes to 165F.

Wow - incredibly moist and flavorable.

Agree, dry brine works well except on the largest of birds. I will let you off this time, but it didn't happen if no pics.
