Wasn't going to post this but I have some time to kill this morning. Was the day going to give my retirement noticed and had some stomach problems and sore throat. Of course thought Covid. Just got back from Trusted ER and results negative. Just nerves I guess. Anyhow:

Had a rack of Beef Short ribs. Had to trim a lot of fat to expose the meat for seasoning.

This the 3rd time using this BBQ Guru on the WSM. I have falling in love with this smoker all over again. It did run about 20 degrees off but I just ended up lowering it to 230 and held 250 the whole time. I used about 1/2 used charcoal and 1/2 new with hickory chucks.

Beef ribs done. Realy though would get a nice smoke ring but not. No big deal. Made some Scalloped Daikon, thanks Jeff. Corn pretty good considering it winter.

Nice pullback and bark on those beef ribs Brian, good job! Hey, giving your retirement notice and finding out you DON"T have Covid would be a pretty dammed good day even if you weren't 100%. Hope you are feeling all better soon. RAY

Nice job Brian. Those ribs look really good sir. We've come to love beef ribs more and more. They are now #1 even with Tracy who has never wanted to steer (no pun intended) away from pork ribs until recently.

Going to be tomorrow now if HR lets me come back then. Lot of hoops to jump through with this Covid thing. To many people coming in with the virus.
