Here is a rub I use for beef. I use it on Brisket and on london broils.
 

 3 tablespoon coarsely ground black pepper (I will substitute 1 TBS with the 5 fiery pepper for a lil more spice)
 2 tablespoons table salt
 1 tablespoon granulated white sugar
 1 tablespoon onion powder
 2 teaspoons mustard powder
 2 teaspoons garlic powder
 2 teaspoons chili or ancho powder
 1 teaspoon chipotle or cayenne powder

I'm not much on injecting. When I do a brisket I will rub the night before atleast. Wrap with aluminum foil with a lil beef broth, apple juice and cider vinegar.
