Ive been telling the wife that i want to do beef ribs because i never have done them and she came home with these last night. the store has them labeled beef bones and they look a lot like ribs and have some meat on them.
I went with simple coarse sea salt and ground peppercorn and high smoke( 225 average) on my pellet cooker with hickory until they reach 205 IT.
