Beef ribs, AKA "Dino bones" in the smoker. Done! Q view up!

Gotta ask for "short rib plate" and specify the ones near the shoulder that have lots of meat on 'em.  I have no earthly idea why so many butchers don't seem to know exactly what you are asking for, but they often show you the soup bones where they carved off the prime rib.  Not enough meat on those to mess with in a smoker.
I don't even bother looking any more.

I can leave as much meat on the bones on mine as I want, and they come out awesome.

I have some Single Bones too, but I might just Grill them Hot & Fast for a change.

One time when I asked about short ribs the butcher said that they would tend to have them more in wedding and holiday party season as they're trimmed off of prime rib.  And those are served a lot more at that time of year.

But I've not seen a lot of choice in the last few years, especially which much meat and at a decent price.  Haven't seen as many nice beef roasts to put in the smoker either.  

We joined Costco recently and I like that I can peruse the choices, prices, weight, and trim without having to ask the butcher.  And the prices are good.  The roasts are a bit larger and they don't cut down, but I like having some leftovers.

He is referring to the back rib and they have so little meat left on them they are basically good only for soup bones, not smoking.  You want the short ribs AKA short rib plate, from the front, lower section of ribs.  Some butchers know what it is, and some look at you like a deer caught in the headlights. Typically, smaller markets and big box stores don't have these.  In my area we have a chain of markets well known for their meats and have an old fashioned meat counter where one can get any cut you desire.  They are a bit pricey, but it's top quality meat and they cut and trim it right in front of you and present it for your approval before wrapping it.

See diagram below for where you should ask for ribs from.  Don't let them cut them into single ribs as you really want all 4 connected for best results

Resturant Depot in Northern Virgina has them in 4 different grades....Prime, Choice, Angus Choice and good.....I prefer the Angus Choice (each is a step higher in cost)
 
 
Where do you guys get your dino bones?  In Minnesota it's almost impossible to find them with any meat on them. I have asked the local butchers, but They tell me all their meat comes from packing plants now and finding these cuts with a lot of meat on them is difficult to do. 

Also curios as to what you pay per lb?  Walmart has them for $2.69, but again, very little meat on them. 
You might be confusing the different ribs here. These are plate ribs or also known as short ribs. Regular beef ribs are spare ribs are what most places carry. Also they are not the same price either. 3 of these will run you around 40 plus change.

The hunk of ribs in my pic cost just over $22 with tax.  $4.99 per pound for these is the best price I have seen and some places are as much as $5.99.  I can buy the "boneless" beef ribs for the same price and every ounce is edible with no bones or connective tissue to toss out.  Brisket is about half the cost, so I don't do beef ribs very often

Yeah, you have to special order a "full plate" here. I've only done it once and the plate was $33. They were excellent, but not that excellent....
