Hey all. I've only been smoking for a few months and have done ribs 5 times. Everytime I've done them I've foiled and kind of followed the 3-2-1 for spares, or the 2-2-1 for BBs.

I'm wanting to do some BBs this weekend only I want to try them without foiling.

I'm looking for some tips. I'm using a kamado cooker and keep my temps in the 230-250 range.

1. I assume I prep the ribs the same as always with a rub?

2. Do I need to do anything while they are cooking? Add sauce, spritz, etc.?

3. About how long should they cook?

That's all I can think of at the moment.

Any advice or tips would be appreciated.

Edit to add - I did some more reading and I think I've got it.

I'll do another thread with a Qview on Friday.

I think so. Going to keep the temp in the 230 range and assume 3-4 hrs. I'm not going to spritz but will apply some sauce towards the end of the cook. I'll be using Stubbs briquettes with some hickory and cherry chunks mixed in.

I'm taking Friday off and it's supposed to be in the low 60's, which is great for January in Illinois.

We are having the 60's too here...and it's a bit scary with Tornados and such.  Just one addition to what you have said....let the internal temp of the BB's be your guide...not the time.  Every BB is different and sometimes they have a "mind of their own". I had one go 20 hours one time.....I was asleep by the smoker ...made for a long day!  Good luck and show q-view!
