Hi folks,

I'm smoking some pork on a Weber kettle later this week. Charcoal + wood chunks. I plan to hold at around 250.

I have a Boston butt that's about 4.75lb, and a pork shoulder that's 3.75lb. Someone told me that the two meats cook at different speeds. Any advice on how I should time the cooking? What should go on first, and when should the second go on?

One will probably get done sooner than the other because of the size of it but I wouldn't say they cook at different speeds. Every piece of meat is different. I've had some butts take 8 hours and some butts take 20 hours. Also timing will depend on what temp you plan to smoke at as well and if you foil or don't foil.

I would put them both on at the same time and just keep an eye on the IT. If one gets done sooner than the other wrap it in foil and put it in a cooler with some old towels or blankets it will stay hot for hours. Good luck let us know how it turns out!
