I have been toying with the idea of building a whole hog wooden smoke house. My idea is to build the smoke house with a horizontal rotisserie mounted in the center top of the house. The rotisserie would have a removable spit to facilitate spitting the hog. The idea of the rotisserie is to ensure even cooking. My idea would use a detached fire box with heat and smoke piped in low on one side and vent out high on the opposite. Like I said just toying with the idea,
Lookin for thoughts or comments on the idea.
I need a winter project now that golf season is coming to an end.
 
I've had a whole hog catch fire.... Grease fires are impressive... I'd build it out of steel or concrete block....
 
Would not the fire hazard be mitigated by the fact that the hog and rendered fat would be remote from the fire.
