I have been using a Char-Griller Outlaw with the side fire box for about 5 or 6 yrs now. I extended the chimney inside down to the coal grate, and that is the extent of the mods. However, I have often questioned how accurate the thermometer is that the grill came with. Is there a better location for it, or even a better unit to install? I used the smoker today and it was a bit breezy outside, and about 45* and I had to have a lot of fire in the side box to keep the temp at a minimum of 200* according to the thermometer. But even with that low reading, the stuff got done quicker than I had anticipated, which makes me question it's accuracy.

Most stock therms aren't very accurate. The therm on my GOSM can be off as much as 20* either way, just depends on how it feels at the time I guess. One of the best and most popular therms is the Maverick ET-732. It is digital with 2 probes, 1 for smoker temp and 1 for meat temp and it also has a programmable remote so you can watch the temps from inside the house and set up alarms for different things like high or low smoker temp or high or low meat temp and also a timer.

One of our forum sponsors has it on sale right now with free shipping:

Most factory therms are junk. If you can take it out, give it a boiling water test. I have a maverick ET 732. It is a dual probe ( one for smoker, one for meat ). Best investment ever. It is remote and has hi and lo temp alarm settings. You can get them from Todd one of our sponsors.

I have a Mav as well but use it to get me in the range.  I check final temp with a thermapen.  I've already had to replace probes on the Mav and don't expect it to last.  Nothing I've read - jusy don't think it's a high end instrument.  As a replacement when the time comes I'll probably look for something a little more professional grade.

I've had mine for a little over a year and use it almost every weekend and the only thing I've ever had to replace was the batteries and only once so far.
