I have been using a Char-Griller Outlaw with the side fire box for about 5 or 6 yrs now. I extended the chimney inside down to the coal grate, and that is the extent of the mods. However, I have often questioned how accurate the thermometer is that the grill came with. Is there a better location for it, or even a better unit to install? I used the smoker today and it was a bit breezy outside, and about 45* and I had to have a lot of fire in the side box to keep the temp at a minimum of 200* according to the thermometer. But even with that low reading, the stuff got done quicker than I had anticipated, which makes me question it's accuracy.
