Greetings all!  I live in rural West TN about an hour east of Memphis and I'm tired of having to get my BBQ and other smoked products from someone else.  I'm ready to jump in and do it myself!  I have a little vertical smoker that I've used with mixed success.  My first attempt was with some chicken halves which I smoked way too long (about 8 hours) and got that mouth-numbing sensation on the first bite in.  Lesson learned...  I plan on smoking chickens, sausages and the occasional butt or two...
