35lbs of Breakfast Sausage w/son

I had this problem then I told them the story of the Little Red Hen... 

If they don't help they don't get to enjoy it. It only took once giving it away as gift boxes so no one got any and they help me whenever I need it now.  I love that story it is so simple a story that it works.
its a great idea if i don't wuss out and not enforce it. problem is, when it comes to my girls, i tend to spoil em pretty good. their good about most everything else, but just don't have any interest in sitting around the kitchen helping make sausage. cooking bread, making dinner even cleaning the kitchen etc, their right in the middle. just no interest in helping me with sausage.
 
That's awesome.  I will I could get my son to help, for that matter anyone to help!

Hi Smoke Happens, I see you are in Arlington, Wa. Not sure if you have a cash & carry oulet close to you, but if so, Right now and until Feb. 24th, they have boneless Pork Butts on sale for $1.35 per pound. They come packed 2 butts to a package and the ones i have bought usually run around 14 to 18 pounds per package.

I have made some really good sausage with the butts from there.

Hello smoke happens, the sausage looks great have you ever had smoked breakfast sausage i wonder how that recipe would be cold smoked. I have a place here at home that i used to get it from but they have changed hands since and the smoked sausage has suffered so im thinking of building me a smokehouse for such a thing
 
Involving the family is great. Growing up we butchered several beef and a couple of hogs each year. As a youngster, it was boring cutting up meat for 2 days. Once I was old enough to use a knife things got more interesting. Grinding, mixing and stuffing the old times. Definitely fun memories. My oldest is just about ready to start helping with some good supervision.
 
I'm confused (which is easy) 0.5 oz. of what per pound
the sausage recipe spices after getting mixed together.

Here is my recipe, it's Pops recipe with a few tweaks:

8oz Kosher Salt

2oz Rubbed Sage

1.5oz Brown Sugar

1oz White Pepper

1oz Black Pepper

Use .5oz per lb, I cube all of the meat and season the cubed meat in the tub BEFORE grinding. I let the grinder do the heavy mixing for me, easier to mix the seasoning into the cubed pieces than into ground meat in my opinion.
 
wow, that brought me back to when I was a kid, helping my dad butcher a cow, or chickens, our the few times we had a pig or two. (hand crank grinder, tho. Thank heaven for electricity!) you did more than make great sausage for your family. You, sir, made a lifetime memory for your son. And yourself! thanks for jump starting my old memory, too. My dad is still awesome.
 
Them vacum packers are great Really enjoy you e-mails cant wait for spring to get here I'll be living around the smoker. lol
 
Thanks again everyone, I have to get in as much time now why he still wants to spend time with me and still thinks I know more then he does! If he's anything like I was in my adolecense, that opinion changes here in a few years

It's all bulk sausage, not stuffed, so it goes straight to the frying pan when it's time to eat. The only exception to this is when I make a fatty out of breakfast sausage, but it's normally stuffed with other goodies so it's not just smoked breakfast sausage. Other than that I have not smoked breakfast sausage.

I cold smoked some of the venison breakfast sausage I made this year before freezing. It came out awesome! I wish I had cold smoked all of it.
 
No trim for sausage,for pulled pork I only leave a small cap on. Mine already had skin off, if skin was on I would remove that.

Spending time with your kids doesn't mean you have to go to Disney world. Same as time spent with the spouse. Some of our most valuable time as a couple is spent together at the grocery store! Your son will always remember helping you. My Mother in Law said to her husband "who cares if the kid screws it up, let him try it and then you can help him out"! Parenting is a tough job!

BTW, we'll all be over for breakfast to help celebrate your parenting skills!
