This is the first time I've had the confidence to trust my USD 30 overnight. I was being conservative and set it to keep a little on the low side until I was going to be up to keep a closer eye on things.

Man it was good. Sandwiches once and the next night I made pp fajitas, rest into the freezer for later. I shared with my neighbor and he suggested I clean out my garage and put in a window where he can stop and order.

Sorry playitpaul1, I just now saw this.

No real recipe, just coated with yellow mustard and used this rub http://www.smokingmeatforums.com/t/231082/tweak-my-rub

Kept temps under 250 the whole time. Pulled @ 205 internal. It was outstanding! Resulted in my neighbor buying his first smoker yesterday.
