I have cooked a lot of hogs and a lot of BBQ but today is the first time that I have just cooked a pork butt. I went all out even using the great finishing sauce of Jeff's.

I covered in mustard, then rubbed, put on my smoker at 7:30 & 250*. Took off at 1:30 and served. I was cutting up deer and the temp spiked to 350* once when I added a new mesquite log. Created some good bark and was enjoyed by all. Pork butt seems to be pretty forgiving.

BTW, I hope you get more deer before the season is over. Our muzzleloader season opens here Saturday morning.
 
The season where I hunt does not close until the end of February. I know before then my freezer will be full.
