Honestly I'm not sure the proper way to test the probes for temp. I was going to search here for a thread on it when it came time.
I'd have to defer to members with more experience with this thermometer.
I'm definitely a newbie myself but one thing I learned when I smoked pork ribs for the first few times was that the 3-2-1 method is good in theory but may need to be adjusted to each cooking session. Meaning that sometimes it may take me 2 hours to get to the foil stage as opposed to 3 hours...
