    Victornox if you want easy stainless steel. Old Hickory are a little bit more work to maintain, but they are half the price, and you can make them razor sharp.

    Let your friends cut the fat off of their serving of Brisket. Leave the fat cap in place. If it is a really large brisket, you may need to "harvest" the flat before the tip. Since it can come to the ideal temperature first.

    on the Smoke n Grill it is just a barrel with two bowls and racks. The Gourmet has a base you build the fire on, then place the barrel over the fire.
