    Thanks for the advice. This model of MES won't allow the top vents to close completely but I'll try keeping the chip loader in and see what happens.

    Well it seems to happen when I've opened the door to check the food. I remove the chip loader because I remember reading that the tubes have trouble producing smoke without enough enough airflow. Maybe I'll try keeping the chip loader in the next time.

    Price of Brisket

    I joined my local Costco hoping to find a good price on brisket.  Unfortunately all they carry are trimmed flats and those were $8 something a pound...  I guess it's going to be trips out to JW Trueths from now on whenever I want/need to do briskets.
