    Thank you for the advice timberjet!  It did turn out really good I thought for a first real attempt.  As far as the probes go, I know the one on the smoker is off, that is why I use my Redi Check probe.  It has two probes.  One I use in the meat, one in the chamber.

    I will try the reverse sear the next time.  I have a hard time getting a good bark, or any bark at all in my MES.  Mu understanding is because it does not get hot enough.  The reverse sear should take care of that don't you think?

    I made sure that I scored it so I would know which way to slice it.  This will be the first one I have ever eaten as well as cooked.  I am excited!!
