things I've learned with my smoker. I need to get my chips further away from my fire. They flame up and burn and send the temp sky high. I need a thermometer that works. They one on my grill ain't even close.
I going out on a limb, and say my temp is off a lot.
Just check the meat temp... it's 120 :(

I've started my first smoke today.
