For anyone else that doesn't know. It's is NOT ok to use galvanized metal when working with food. When galanized metal is heated, it gives off toxic fumes.

Ahhh that's so funny. So if we are going to think along those lines. What if you wrapped a duck in bacon and smoked it ..... then stick it inside a bacon wrapped chicken and smoke the chicken ........ then stick it in a bacon wrapped turkey and smoke the turkey. OH wait ..... I've gone too...
Turduken are just fine ....... if you happen to love duck. I thought I turduken would be great. But, forgot I don't like duck. Thought wrapping the duck in chicken and turkey would make the duck taste better ........ nope.

My buddy really likes smoked jalepenos. He's the one that showed me how to smoke and got me interested in an MES 40. But, I can't take the heat of jalepenos. I only use green chilis in mine. But ...... I do put some sliced hot peppers on the side (for those that can handle them).
I'm getting a MES 40 for Xmas ...... I plan to start the new year off with some brisket, chickens and ribs. But .... my crock pot chili has to be one of the best side dishes. I'm hoping to smoke the meat for the chili in my new smoker.

Mutt here .... new to smoking. Been a hard core grill cooker for years. Finally had a buddy show me the finer points of smoking. Love the way his chow comes out. Getting a Masterbuilt 40 Electric smoker for christmas.

Getting a MES 40 for Xmas and was reading about the AMPS and was wondering how you use it in a MES 40 electric smoker. Any info would be helpful. Sorry for the Noob question.
